The Collaborare Rosé carries an allure of pale coral and ripe, juicy cantaloupe, a visual cue that invites salivation even before the wine meets the nose. A delicate rose-gold edge adds another layer of elegance.
This hue is also the result of an unusual amalgamation of grape varieties, brought together seamlessly in the blend: Cabernet Franc, Pinotage, Chenin Blanc, and Chardonnay. Each contributes its voice, yet the wine speaks as one – lending both interest and cohesion.
The first aromatic impression is playful and inviting, showing candied apple, pomegranate, and lychee sorbet when served properly chilled, evolving gently in the glass towards sun-ripe strawberry. Crunchy notes of red plum follow, moving into dried goji berry, quince preserve, and a suggestion of cinnamon-dusted pineapple – all framed by a sappy floral touch reminiscent of veld poppies.
From the start, the wine arrests the palate. A sweet-sour tang of fruit introduces layers of watermelon, mixed red berries, and a tart lift of lemon, mint, and kiwi, finishing with brisk lime and a pithy grip on the aftertaste. Pink grapefruit, chilli & burrata with olive oil and cracked coriander seed
This salad celebrates the colour and layered profile of the rosé. The bitterness of pink grapefruit mirrors the wine’s pithy edge, while beetroot as a substitute for the grapefruit will bring a more earthy expression. Quality burrata allows the wine to step into a silky frock, softening the acidity without muting freshness. A pinch of chilli (or black pepper) adds a spicy lift while coriander seed meets the floral notes without becoming too herbal.
Seared tuna with ginger glaze
If rhubarb is available, it plays beautifully with the wine’s sweet-sour tension, though ginger alone lifts the fruit profile with subtle warmth. Seared tuna, left rare at the centre, brings a silky texture that allows the wine’s layers to move freely around the palate – creating a mouth-filling, fluid experience with each bite.
